These are project-ready (glue-ready), S4S cutting board stick staves / boards made from beautiful unsteamed, kiln-dried sappy walnut.  They make gorgeous and unusual cutting and charcuterie boards from face or end / edge grain.  Apply some mineral oil and watch the color and grain really pop!
The stark difference between black (heart wood) and white (sap wood) has to do with where in the tree the board was cut from.  The sap wood is in the outer rings of the tree, whereas the heart wood is from the inner tree rings.  The place where these rings meet is often filled with swirls of different colors.
